Edo Tokyo Vegetables pass on the food culture of Edo and Tokyo.
Tokyo’s traditional vegetables, Edo Tokyo Vegetables, originated when feudal lords who came to Edo to fulfill their compulsory stay brought vegetables seeds from their hometowns and cultivated them. They are defined as native varieties grown on farmland in the city over several generations until around 1965, or vegetables that are still grown today using the past cultivation methods of that time.
